At the head of the vineyard, handed down from father to son for eight generations, Eric Forest produces, on vineyard plots planted between 1930 and 1979, seven confidential cuvees from Pouilly-Fuissé, Saint-Véran, and Mâcon-Vergisson.
He forged a philosophy of the vine under the influence of his grandfather, who passed on his knowledge of Nature and Biodynamics. He does all the work manually to be rigorously precise. It begins with a short stature to provide aerated feet and minimize pest control products. It then struggles ecologically against the competing plants of the vine by doing complementary plowing that makes the soil live and require the roots to tap into the deep wealth of the soil. The bunches are picked by hand and gently pressed. There begins the vinification. An extreme care brought to all the stages of the elaboration of the wine, pledge of a quality product of the soil, fruit of his passion.
