Since 1792, from generation to generation, the Collet family has been dedicated to the vineyard. Jean Collet created the Domaine Jean Collet in 1952, in 1979, Gilles joined his father and the farm became the domain Jean Collet & Fils.Le Domaine exploits an area of 37.25 hectares.
The wine of Chablis is made from a single grape variety: Chardonnay.
The name Chablis is located on soils of the Jurassic era secondary floor "Kimmeridgian", composed of marly limestone containing a large amount of marine fossils including the main "Exoya Virgula", or small oyster comma-shaped , which plays an important role in the distinctive character of Chablis wines.
